Ingredients:
- 8 small corn tortillas
- 1 cup of our guacamole
- 1 small red onion, finely diced
- 1 large tomato, diced
- 1/4 cup fresh cilantro, chopped
- 1-2 tablespoons lime juice
- Salt and pepper to taste
- Optional toppings: shredded lettuce, diced jalapeños, vegan sour cream, salsa, etc.
Instructions:
- Make the guacamole: It’s already made! As good as homemade!
- Add the diced red onion, diced tomato, chopped cilantro, and lime juice to the mashed avocado. Mix everything together until well combined. Season with salt and pepper to taste.
- Warm the tortillas: You can heat the tortillas in a dry skillet over medium heat for a minute on each side until they are soft and pliable. Alternatively, you can wrap them in a damp paper towel and microwave for about 30 seconds.
- Assemble the tacos: Spoon a generous amount of guacamole onto each warm tortilla. Add any additional toppings you desire, such as shredded lettuce, diced jalapeños, vegan sour cream, or salsa.
- Serve: Serve the vegan guacamole tacos immediately while the tortillas are still warm. They’re best enjoyed fresh!
