- 4 large bell peppers (assorted colors)
- 2 cups of our guacamole
- 1 cup cooked quinoa or rice
- 1 cup black beans, drained and rinsed
- 1 cup diced tomatoes
- 1 cup diced red onion
- 1 cup shredded lettuce or spinach
- Optional: vegan cheese for topping
Instructions:
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes to create a hollow center.
- In a mixing bowl, combine the guacamole, cooked quinoa or rice, black beans, diced tomatoes, and diced red onion.
- Stuff each bell pepper with the guacamole mixture.
- Place the stuffed peppers in a baking dish and cover with foil.
- Bake in the preheated oven for about 25-30 minutes or until the peppers are tender.
- Optionally, remove the foil, sprinkle vegan cheese on top of the stuffed peppers, and bake for an additional 5 minutes until the cheese is melted.
- Remove from the oven, top with shredded lettuce or spinach, and serve as a hearty and satisfying meal.
