Guacamole Stuffed Peppers

Ingredients:

  • 4 large bell peppers (assorted colors)
  • 2 cups of our guacamole
  • 1 cup cooked quinoa or rice
  • 1 cup black beans, drained and rinsed
  • 1 cup diced tomatoes
  • 1 cup diced red onion
  • 1 cup shredded lettuce or spinach
  • Optional: vegan cheese for topping

Instructions:

  • Preheat the oven to 375°F (190°C).
  • Cut the tops off the bell peppers and remove the seeds and membranes to create a hollow center.
  • In a mixing bowl, combine the guacamole, cooked quinoa or rice, black beans, diced tomatoes, and diced red onion.
  • Stuff each bell pepper with the guacamole mixture.
  • Place the stuffed peppers in a baking dish and cover with foil.
  • Bake in the preheated oven for about 25-30 minutes or until the peppers are tender.
  • Optionally, remove the foil, sprinkle vegan cheese on top of the stuffed peppers, and bake for an additional 5 minutes until the cheese is melted.
  • Remove from the oven, top with shredded lettuce or spinach, and serve as a hearty and satisfying meal.
