Guacamole Stuffed Chicken Breast:

  • 4 boneless, skinless chicken breasts
  • 1 cup of our guacamole
  • 1 cup shredded cheddar
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Instructions:

  • Preheat your oven to 375°F (190°C).
  • Pound the chicken breasts: Place each chicken breast between two sheets of plastic wrap or in a ziplock bag and pound them gently with a meat mallet or rolling pin until they are an even thickness, about 1/4 to 1/2 inch thick.
  • Season the chicken: Rub the chicken breasts with olive oil, then season them with chili powder, garlic powder, onion powder, salt, and pepper. Make sure both sides of the chicken are coated evenly.
  • Stuff the chicken: Lay out each chicken breast and spread a generous spoonful of guacamole onto the center of each piece. Top the guacamole with shredded cheese.
